Preparation

    Prepare Garlic Confit

    In a small saucepan, combine garlic cloves and olive oil. Heat over low heat and simmer for about 40 minutes, until garlic is soft and golden. Remove from heat and let cool.

    Roast Marrow Bones

    Preheat the oven to 450°F (230°C). Place the marrow bones upright on a baking sheet and season with salt and pepper. Roast for about 15-20 minutes, or until the marrow is soft and begins to pull away from the bone.

    Make Balsamic Gastrique

    In a saucepan, combine balsamic vinegar and sugar. Bring to a boil over medium heat, then reduce to a simmer. Cook until thickened, about 10-15 minutes. Remove from heat and let cool.

    Prepare Baguette

    Slice the baguette into 1 inch thick slices. Optionally, brush with olive oil and toast in the oven until golden brown.

    Assemble and Serve

    Spread garlic confit on toasted baguette slices. Place roasted marrow on top and drizzle with balsamic gastrique. Serve immediately.
