Roast the Beets
Preheat your oven to 400°F (200°C). Wash the beets thoroughly and wrap each one in aluminum foil. Place them on a baking sheet and roast for about 45-60 minutes, or until they are tender when pierced with a fork. Once done, let them cool, then peel and slice them into wedges.

Prepare the Orange Supremes
While the beets are roasting, peel the oranges and remove the segments (supremes) by cutting between the membranes. Set aside the supremes and any juice that collects.

Assemble the Salad
On a large serving platter, arrange the roasted beet wedges. Tear the burrata cheese and place it over the beets. Scatter the orange supremes and candied walnuts on top. If using, add fresh arugula around the edges.

Drizzle with Balsamic Reduction
Drizzle the balsamic reduction over the entire dish and sprinkle with sea salt to taste.
