    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Wash and scrub the fingerling potatoes and heirloom carrots. Cut the carrots into uniform lengths.

    Roast the Vegetables

    Toss the fingerling potatoes and heirloom carrots in a baking dish with 2 tablespoons of olive oil, salt, and black pepper. Roast in the preheated oven for about 25-30 minutes, or until tender and golden brown.

    Prepare the Leek and Cream Sauce

    While the vegetables are roasting, slice the leek into thin rings and rinse under cold water to remove any dirt. In a saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the leek and sauté until soft, about 5 minutes. Pour in the heavy cream and bring to a simmer. Stir in the chopped parsley, salt, and pepper. Cook for an additional 5 minutes, then remove from heat.

    Cook the Arctic Char

    In a large skillet, heat a little olive oil over medium-high heat. Season the Arctic Char fillets with salt and pepper. Place them skin-side down in the skillet and cook for about 4-5 minutes, until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until cooked through.

    Serve

    Plate the roasted fingerling potatoes and heirloom carrots alongside the Arctic Char. Drizzle the leek and parsley cream sauce over the fish and serve with slices of bread.
