    Prepare the Ingredients

    Gather all the ingredients. Slice the heirloom tomato and cook the Nueske bacon until crispy.

    Season the Wagyu Patty

    Season the wagyu beef patty with salt and black pepper on both sides.

    Cook the Burger

    Fire up your wood-fired grill to a high temperature. Place the seasoned wagyu patty on the grill and cook for about 4-5 minutes on each side for medium-rare. If desired, add the pimento cheese on top of the patty during the last minute of cooking to let it melt.

    Toast the Brioche Bun

    While the burger is cooking, lightly toast the brioche bun on the grill until golden brown.

    Assemble the Burger

    On the bottom half of the toasted brioche bun, layer the Bibb lettuce, followed by the cooked wagyu patty with melted pimento cheese, crispy bacon, and sliced heirloom tomato. Top with the other half of the bun.
