Preparation

Prepare the Lamb Chops

1. Season and Sear

Preheat the oven to 400°F (200°C). Season the lamb chops with salt and black pepper. Heat olive oil in a large oven-safe skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.

2. Prepare the Crust

In a bowl, mix the chopped figs, hazelnuts, and rosemary. Press this mixture onto the seared lamb chops.

3. Bake

Transfer the skillet to the preheated oven and roast for 10-15 minutes for medium-rare, or until your desired doneness is reached. Let rest for a few minutes before serving.

Cook the Baby Carrots

4. Glaze the Carrots

In a saucepan, melt butter over medium heat. Add baby carrots, honey, salt, and black pepper. Cook, stirring occasionally, for about 10-12 minutes until the carrots are tender and glazed.

Make the Goat Cheese Potato Gratin

5. Prepare the Gratin

In a greased baking dish, layer half of the sliced potatoes, sprinkle half of the goat cheese, and season with salt, pepper, and garlic. Repeat with the remaining potatoes and goat cheese.

6. Add Cream and Bake

Pour the heavy cream over the layered potatoes. Sprinkle fresh thyme on top. Cover with foil and bake in the oven at 375°F (190°C) for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until golden brown.
