Baking Instructions
- 1
Prepare the Topping
Preheat the oven to 350°F (175°C). Melt the butter in a 9-inch round cake pan and sprinkle the brown sugar evenly over it. Arrange the pineapple rings on top of the sugar mixture, placing a cherry in the center of each ring.
- 2
Make the Cake Batter
In a mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, baking powder, and salt. In another bowl, whisk together the eggs, vanilla extract, and milk. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- 3
Combine and Bake
Pour the batter over the pineapple and cherries in the cake pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 4
Cool and Serve
Remove the cake from the oven and let it cool in the pan for about 10 minutes. Invert onto a serving plate and serve warm with a scoop of vanilla ice cream on top.
