    Make the Spinach Gnocchi

    Blanch spinach in boiling water for 1-2 minutes until wilted. Drain and cool, then squeeze out excess water. In a bowl, mix spinach, ricotta, flour, egg, and salt until a dough forms. Roll into small logs and cut into pieces to form gnocchi.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Prepare Pancetta and Tomatoes

    In a skillet, heat olive oil over medium heat. Add diced pancetta and cook until crispy, about 5-7 minutes. Add halved cherry tomatoes and cook until they begin to burst, about 3-4 minutes.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Poach for 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon.

    In serving bowls, combine gnocchi with pancetta, tomatoes, and basil pesto. Top each bowl with a poached egg and serve immediately.
