Roasting the Chicken
1. Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the organic half chicken dry with paper towels. Rub the olive oil all over the chicken, making sure to get it under the skin for extra flavor.
2. Season the Chicken
In a small bowl, combine the minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the chicken, including inside the cavity.
3. Roast the Chicken
Place the chicken on a roasting pan breast-side up. Roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
4. Rest the Chicken
Remove the chicken from the oven and let it rest for 10 minutes before carving.
