    In a large bowl, whisk together the eggs, salt, and black pepper until well combined.

    In an oven-safe skillet, heat the olive oil over medium heat. Add the baby arugula and sauté until wilted, about 2 minutes.

    Add the lobster meat to the skillet with the arugula and stir to combine. Pour the egg mixture over the lobster and arugula, ensuring even distribution.

    Tear the burrata cheese into pieces and scatter over the top of the frittata.

    Cook on the stovetop for about 3-4 minutes until the edges begin to set, then transfer the skillet to the preheated oven.
