Shred the Duck
Remove the duck legs from the pot and let them cool. Shred the meat, discarding the bones and skin. Reserve some duck fat for frying later.

Assemble the Dumplings
Place a wonton wrapper on a clean surface. Add a spoonful of shredded duck confit in the center, and top with a few bean sprouts and cilantro. Moisten the edges of the wrapper with water, fold over, and press to seal tightly.

Cook the Dumplings
In a skillet, heat a small amount of reserved duck fat over medium heat. Fry the dumplings until golden brown on both sides, about 3-4 minutes per side. Alternatively, you can steam the dumplings for about 10 minutes.

Serve
Serve hot with tamarind sauce drizzled on top or as a dipping sauce on the side.
