Beef Osso Buco

    Sear the Beef

    In a large Dutch oven, heat olive oil over medium-high heat. Season the wagyu beef shanks with salt and pepper, then sear each piece until browned on all sides, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add diced carrot, celery, onion, and minced garlic. Sauté until softened, about 5 minutes.

    Add Liquid

    Stir in tomato paste and cook for 2 minutes. Add red wine, scraping up any browned bits from the bottom. Let simmer for 3 minutes.

    Braise the Beef

    Return the beef shanks to the pot. Add beef broth, thyme, and bay leaf. Bring to a boil, then reduce to a simmer. Cover and cook for 2-3 hours, or until the meat is tender and falling off the bone.

    Prepare Potatoes

    Boil purple potatoes in salted water until fork-tender, about 20 minutes. Drain and return to pot.

    Mash Potatoes

    Add heavy cream, butter, truffle oil, salt, and pepper to the potatoes. Mash until smooth and creamy.

    In a skillet, heat olive oil over medium heat. Add leeks, peas, and carrots. Sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.
