Bison Filet

    Prepare the Bison

    Season the bone-in bison filets with salt, black pepper, and fresh thyme. Let them sit at room temperature for about 30 minutes.

    Sear the Bison

    Heat olive oil in a cast-iron skillet over medium-high heat. Add the filets and sear for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Cook the Potatoes

    Boil fingerling potatoes in salted water until tender, about 15 minutes. Drain and set aside.

    Sauté the Onions

    In a skillet, melt butter over medium heat. Add sliced onions and cook until caramelized, about 10 minutes.

    Combine Potatoes and Onions

    Add garlic to the skillet with onions and cook for 1 minute. Then add the boiled potatoes, salt, black pepper, and parsley. Toss to combine and cook until heated through.

Herbed Bourbon Butter

    Make the Herbed Butter

    In a bowl, combine softened butter, bourbon, rosemary, thyme, and garlic powder. Mix until well combined. Shape into a log and refrigerate until firm.
