Make the Blackened Shrimp
In a large skillet, heat the olive oil over medium-high heat. Season the shrimp with the blackening seasoning, then add them to the hot skillet. Cook for 2-3 minutes on each side until they are opaque and cooked through. Remove from heat and set aside.

Prepare the Salsa
In a mixing bowl, combine the black beans, corn, diced red onion, and half of the chopped cilantro. Squeeze the juice of one lime over the mixture and stir to combine. Set aside.

Make the Cilantro-Lime Crema
In another bowl, mix the sour cream, remaining lime juice, and the rest of the chopped cilantro. Stir until smooth and well combined.
