Prepare the Tempura Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water and mix until you achieve a smooth batter.
Prepare the Fish
Pat the petrale sole fillets dry with paper towels. Dip each fillet into the tempura batter, ensuring it's fully coated.
Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Fish
Carefully place the battered fish fillets into the hot oil, frying them in batches for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and let drain on paper towels.
Cook the Fries
While frying the fish, cook the frozen French fries according to package instructions until crispy.
Prepare the Jalapeno Tartar Sauce
In a small bowl, mix together mayonnaise, chopped jalapenos, diced pickles, lemon juice, and salt to taste. Adjust the heat by adding more jalapenos if desired.
Prepare the Green Apple Cabbage Slaw
In a bowl, combine shredded cabbage, grated green apple, a splash of lemon juice, and a pinch of salt. Toss to combine.
Assemble the Dish
