1. Prepare the Short Ribs
Season the short ribs with salt and pepper. In a large pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove from pot.
2. Braise the Short Ribs
Add chopped onion to the pot and sauté until caramelized. Return short ribs to the pot and add beef broth. Bring to a simmer, cover, and cook on low heat for about 3 hours, or until the ribs are tender.
3. Prepare the Caramelized Onions
Remove the short ribs from the pot and shred the meat. Strain the liquid from the pot and reserve for later use. In a separate pan, add a tablespoon of the reserved liquid and sauté the onions until golden brown.
4. Assemble the Grilled Cheese
Spread horseradish sauce on one side of each slice of sourdough. On the other side, layer shredded short rib, caramelized onions, and white cheddar cheese. Top with another slice of sourdough, sauce side down.
5. Grill the Sandwiches
In a skillet, melt butter over medium heat. Grill each sandwich until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
6. Serve
Slice the sandwiches in half and serve warm with any remaining braising sauce on the side.
