Prepare the Jalapeño Tartar Sauce

In a bowl, mix together the mayonnaise, minced jalapeños, minced dill pickles, and lemon juice. Season with salt and pepper to taste. Set aside.

Make the Apple-Cabbage Slaw

In a large bowl, combine the shredded cabbage and grated apple. Toss with a pinch of salt and pepper. Let it rest for 10 minutes to soften.

Prepare the Tempura Batter

In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add cold sparkling water until the batter is smooth.

Fry the Fish

Heat the vegetable oil in a deep pot over medium-high heat. Dip the petrale sole fillets in the tempura batter and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Cook the Fries

While the fish is frying, prepare the frozen French fries according to the package instructions.
