Braised Beef Short Ribs and Accompaniments

    Prepare the Short Ribs

    Preheat your oven to 350°F (175°C). Season the beef short ribs generously with salt and black pepper.

    Sear the Ribs

    In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add onion and garlic. Sauté until the onion is translucent, about 5 minutes.

    Add Liquid and Ribs

    Return the short ribs to the pot. Pour in the beef broth and bring to a simmer.

    Bake

    Cover the pot and transfer it to the preheated oven. Bake for about 2.5 to 3 hours, or until the ribs are tender.

    Prepare the Tamari Chipotle Glaze

    In a saucepan, combine tamarind paste and chipotle sauce. Cook over medium heat until warmed through and slightly thickened, around 10 minutes.

    Make Roasted Pepper Polenta

    In a separate pot, bring 4 cups of water to a boil. Gradually whisk in cornmeal, reduce heat, and cook until thickened, about 15-20 minutes. Stir in butter and roasted red peppers.

    Sauté Broccolini

    In a skillet, add a splash of water and the trimmed broccolini. Sauté over medium heat until bright green and tender, about 5-7 minutes.

    Serve

    Serve the tender short ribs topped with tamarind chipotle glaze, alongside roasted pepper polenta and sautéed broccolini.
