Salmon Preparation

Prepare the Orange Miso Glaze

In a bowl, whisk together orange juice, miso paste, honey, soy sauce, and grated ginger until well combined.

Glaze the Salmon

Preheat oven to 400°F (200°C). Place salmon fillets on a baking sheet lined with parchment paper. Brush the orange miso glaze generously over the salmon.

Bake the Salmon

Bake in the preheated oven for 12-15 minutes or until salmon flakes easily with a fork.

Peach Ginger Rice

Cook the Rice

Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine rice, coconut milk, salt, and minced ginger. Bring to a boil.

Simmer

Reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.

Add Peaches

Fold in diced peaches gently and let sit covered for another 5 minutes.

Stir Fry Vegetables

Stir Fry the Vegetables

In a large skillet, heat sesame oil over medium heat. Add minced garlic and sauté for 30 seconds. Then add bell pepper, broccoli, and carrots.

Add Soy Sauce

Stir in soy sauce and cook for another 5-7 minutes until vegetables are tender yet crisp.
