Prepare the Artichokes

Preheat the oven to 400°F (200°C). Trim the artichokes by cutting off the top inch and snipping the tips of the leaves. Remove the tough outer leaves and rub the cut edges with lemon juice to prevent browning.

Marinate

In a bowl, mix olive oil, minced garlic, lemon juice, thyme, salt, and black pepper. Coat the artichokes with this marinade and let them sit for 30 minutes.

Roast the Artichokes

Place the marinated artichokes in a baking dish and roast for about 45 minutes, or until they are tender and can be easily pierced with a fork.

Prepare Lemon Breadcrumbs

In a skillet, heat a tablespoon of olive oil over medium heat. Add breadcrumbs, lemon zest, and a pinch of salt. Cook until golden brown, stirring frequently.

Fry the Capers

In a small pan, heat olive oil and fry the capers until they are crispy. Remove and drain on paper towels.

Make Citrus Thyme Aioli

In a bowl, mix mayonnaise, lemon juice, lemon zest, and chopped thyme. Whisk together until smooth.

On a serving plate, place a bed of arugula, top with roasted artichokes, sprinkle with lemon breadcrumbs, add fried capers, and drizzle with citrus thyme aioli.
