    Prepare the Walleye

    Season the walleye fillets with salt and black pepper. Lightly dust each fillet with flour, shaking off any excess.

    Cook the Walleye

    In a large skillet, heat the olive oil over medium heat. Add the fillets and cook for about 3-4 minutes per side or until golden brown and cooked through. Remove the fillets and keep warm.

    Make the Sauce

    In the same skillet, melt the butter. Add the minced shallots and garlic, sautéing for about 1-2 minutes until fragrant. Stir in the capers and lemon juice, scraping up any brown bits from the bottom of the skillet.

    Finish the Dish

    Return the walleye fillets to the skillet, spooning the sauce over them to coat. Cook for another minute to warm through.

    Prepare the Sides

    While the fish is cooking, prepare the rice pilaf according to package instructions and steam or sauté the vegetable of choice until tender.

    Serve

    Plate the walleye piccata with rice pilaf on the side and the veggie du jour. Drizzle any remaining sauce over the fish before serving.
