Make the Pie Crust
In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Pear Filling
In a large skillet over medium heat, add the sliced pears, brown sugar, cinnamon, and nutmeg. Sauté for about 8-10 minutes until the pears are tender and the sugars have caramelized. Remove from heat and let cool.

Bake the Pie
Bake in the preheated oven for 25-30 minutes or until the crust is golden brown. Let cool slightly before drizzling with caramel sauce.

Serve warm with a scoop of cinnamon ice cream on the side.
