Sauté the Vegetables
Heat olive oil in a large skillet over medium heat. Add the red onions and bell peppers, sautéing until they soften, about 5 minutes. Then add the sliced mushrooms and confit garlic, cooking for another 3-4 minutes.

Add Spinach and Artichokes
Stir in the fresh spinach and artichoke hearts, cooking until the spinach wilts. Season with salt and black pepper to taste.

Assemble the Lavosh
Preheat your oven to 375°F (190°C). On a baking sheet, lay out the lavosh bread. Evenly distribute the sautéed vegetable mixture over the bread, leaving a small border around the edges. Sprinkle the shredded havarti cheese on top.

Bake
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the lavosh are golden brown.

Serve
Remove from the oven and let it cool slightly. Cut into squares or strips and serve warm.
