    Prepare the Cream Mixture

    In a saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat over medium until it just begins to simmer. Remove from heat and let it cool slightly.

    Mix Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and sea salt until smooth. Gradually add the warm cream mixture, whisking continuously until well combined.

    Add Seasonal Puree

    Stir in the seasonal fruit puree until evenly distributed throughout the mixture.

    Bake the Custards

    Preheat the oven to 325°F (160°C). Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, refrigerate for at least 2 hours or overnight.

    Brûlée the Top

    When ready to serve, sprinkle an even layer of sugar over the tops of the chilled custards. Use a kitchen torch to caramelize the sugar until it forms a crispy, golden crust. Let sit for a minute before serving.
