Prepare the Salmon
Preheat your oven to 400°F (200°C). In a bowl, mix the grated Parmesan cheese, panko breadcrumbs, salt, and black pepper. Brush the salmon fillets with olive oil and then coat the tops with the Parmesan mixture. Place the salmon on a baking sheet lined with parchment paper.

Bake the Salmon
Bake the salmon in the preheated oven for about 12-15 minutes, or until the crust is golden brown and the salmon is cooked through.

Cook the Gnocchi
While the salmon is baking, bring a pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the top. Drain and set aside.

Sauté the Sausage and Veggies
In a large skillet over medium heat, add the sliced andouille sausage and cook for about 5 minutes until browned. Add the mixed vegetables and sauté for an additional 5-7 minutes until tender.
