    Marinate the Chicken

    In a bowl, combine the chicken thighs, jerk seasoning, olive oil, salt, and black pepper. Allow to marinate for at least 1 hour or overnight for best flavor.

    Prepare the Roasted Poblano Aioli

    In a mixing bowl, combine the mayonnaise with the roasted and pureed poblano pepper. Mix well and set aside.

    Grill the Chicken

    Preheat the grill or wood-fired oven. Grill the marinated chicken thighs over medium-high heat for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

    Sauté the Vegetables

    In a skillet, sauté the sliced bell peppers and red onion in a little olive oil until tender, about 5-7 minutes.

    Assemble the Sandwich

    On a slice of house-made bread, layer the grilled chicken, sautéed bell peppers, red onion, and a slice of havarti cheese. Top with another slice of bread.

    Toast the assembled sandwich in the wood-fired oven or on a skillet until the bread is golden brown and the cheese is melted.
