    Prepare the Garlic

    Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil. Roast in the oven for 30-35 minutes until tender.

    Fry the Mushrooms

    While the garlic is roasting, clean the portobello mushrooms and slice them into thick strips. Heat olive oil in a pan over medium-high heat and add the mushrooms. Season with salt and pepper, and sauté until they are browned and tender, about 5-7 minutes.

    Make the Dip Mixture

    Once the garlic is roasted, squeeze the cloves out of their skins into a bowl. Add the basil cream cheese and mix until well combined. Stir in the sautéed mushrooms and mozzarella cheese until evenly distributed.

    Toast the Dip

    Transfer the mixture to a baking dish and spread it out evenly. Place it in the wood-fired oven or conventional oven at 400°F (200°C) for about 10-15 minutes or until the top is golden and bubbly.

    Serve

    Remove from the oven and serve hot with house-made bread and lavosh crackers on the side.
