Prepare the Chicken
Preheat your oven to 180°C (350°F). Take the chicken breasts and slice them horizontally to create a pocket. Place 4 sage leaves and a slice of caciocavallo cheese inside each pocket.

Wrap with Prosciutto
Wrap each chicken breast with 2 slices of prosciutto to secure the filling inside.

Bread the Chicken
Set up a breading station with flour, beaten egg, and breadcrumbs. Dredge each wrapped chicken breast first in flour, then dip in the egg, and finally coat with breadcrumbs.

Cook the Chicken
Heat olive oil in a skillet over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer to the oven and bake for an additional 10-15 minutes until fully cooked through.

Slice the chicken saltimbocca and serve alongside the sautéed chicory and white beans.
