Prepare the aioli
In a small bowl, mix dill, mayonnaise, lemon juice, and garlic together. Season with salt and pepper to taste. Set aside.

Prepare the breading
In a shallow dish, combine cornmeal, flour, Cajun seasoning, salt, and black pepper.

Coat the calamari
Dip the calamari rings into buttermilk, allowing excess to drip off. Then, dredge them in the cornmeal mixture, ensuring they are well-coated.

Heat the oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot, about 350°F (175°C).

Fry the calamari
Carefully add the coated calamari to the hot oil in batches, frying until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serve the fried calamari hot with the dill aioli on the side for dipping.
