Prepare the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Add Buffalo Sauce
During the last few minutes of grilling, brush the chicken with the buffalo sauce to coat it evenly. Let it cook for an additional 2-3 minutes.

Sauté the Vegetables
In a skillet over medium heat, add a little olive oil and sauté the chopped red bell pepper and red onion until tender, about 4-5 minutes. Remove from heat.

Prepare the Toppings
Chop the scallions and celery into small pieces. In a bowl, combine the crème fraîche with a pinch of salt and pepper.

Assemble the Dish
Once the chicken is done, place it on a serving plate. Top with sautéed vegetables, crème fraîche mixture, and shredded Havarti cheese. Optionally, garnish with more scallions.
