Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add 1 tsp of salt to the water.

Cook the Pasta
Add 2 cups of pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.
Preparing Vegetables

Chop the Vegetables
While the pasta cooks, chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

Sauté the Vegetables
In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Vegetables
Add the chopped zucchini and bell pepper to the skillet. Sauté for about 5 minutes until they start to soften. Then add the halved cherry tomatoes and spinach leaves, cooking for an additional 2-3 minutes until the spinach wilts.
Combining Ingredients

Mix Pasta and Vegetables
Add the drained pasta to the skillet with the sautéed vegetables. Stir to combine.

Add Sauce
Add 1 tbsp of balsamic vinegar and 1 tsp of black pepper to the pasta mixture. Toss everything together until evenly coated.

Serve
If desired, sprinkle with Parmesan cheese before serving. Enjoy your Vegetarian Pasta!
