Chocolate Mousse Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until both are completely melted and smooth. Remove from heat and let cool slightly.

    Whisk Eggs and Sugar

    In another mixing bowl, whisk together the large eggs and granulated sugar until the mixture is pale and fluffy, about 5 minutes. You can use a hand mixer for ease.

    Combine Mixtures

    Once the chocolate and butter mixture has cooled slightly, stir in the vanilla extract. Gradually fold in the egg and sugar mixture into the chocolate, being careful not to deflate the eggs.

    Whip Heavy Cream

    In a separate bowl, whip 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until well combined. Be gentle to maintain the light texture.

    Chill Mousse

    Divide the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

    Prepare Whipped Cream

    In a mixing bowl, combine 150 ml of heavy cream, powdered sugar, and vanilla extract. Whip the mixture until stiff peaks form, being careful not to overwhip.

    Serve

    Once the chocolate mousse is set, remove from the refrigerator and top each serving with a dollop of the whipped cream. Optionally, garnish with chocolate shavings or berries.
