Method

Cooking the Quinoa

    Prepare the Quinoa

    Rinse 1 cup of quinoa under cold water to remove any bitterness. Combine it with 2 cups of vegetable broth in a medium saucepan.

    Cook the Quinoa

    Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes or until all the broth is absorbed. Remove from heat and fluff with a fork.

Preparing the Vegetables

    Chop the Vegetables

    Dice the red bell pepper, zucchini, and carrot into small pieces. Set aside.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes, until they are tender.

Cooking the Proteins

    While the vegetables are cooking, drain the chickpeas and rinse them. Cut the tofu into bite-sized cubes.

    Add the cubed tofu to the skillet with the vegetables. Stir in the chickpeas, 3 tablespoons of soy sauce, 1 teaspoon of garlic powder, and 1 teaspoon of cumin. Cook for an additional 5 minutes, stirring occasionally.

Combining Ingredients

    Add the cooked quinoa to the skillet with the sautéed vegetables and proteins. Stir until everything is well combined. Season with salt and black pepper to taste.
