    Chill the Glass

    Place a rocks glass in the freezer or fill it with ice water to chill while preparing the drink.

    Muddle the Sugar

    In a mixing glass, add the sugar cube and Peychaud’s bitters. Muddle them together until the sugar is dissolved.

    Add Rye Whiskey

    Pour in the rye whiskey and add ice to the mixing glass. Stir the mixture for about 20 seconds until well chilled.

    Prepare the Glass with Absinthe

    Remove the chilled glass from the freezer or discard the ice water. Add the absinthe to the glass and swirl it around to coat the inside, then discard the excess.

    Strain and Garnish

    Strain the chilled whiskey mixture into the prepared glass. Express the oil from the lemon peel over the drink and drop the peel into the glass as garnish.
