Tequila Production Process

Harvesting Agave
Begin by harvesting the Blue Weber Agave plants. Cut the leaves off the plant to expose the piña (heart) of the agave. You'll need approximately 7 kg of agave to produce tequila.

Cooking the Agave
Place the piñas in an oven or cook them in a traditional brick oven for about 24 hours at a temperature of 60°C (140°F). This process converts the starches in the agave into fermentable sugars.

Mashing the Agave
Once cooked, allow the piñas to cool, then crush them to extract the sweet juice. This can be done using a traditional tahona (stone wheel) or a modern mechanical shredder.

Fermentation
Transfer the extracted juice into a fermentation vessel. Add 1 g of yeast to the juice to start the fermentation process. Allow it to ferment for about 7 to 14 days at room temperature until the sugars are converted to alcohol.

Distillation
After fermentation, distill the liquid in a pot still or continuous still. The first distillation will yield a liquid called 'ordinario', which is then distilled again to produce tequila. Collect the hearts of the distillation for the final product.

Aging (Optional)
If you desire a reposado or añejo tequila, transfer the distilled spirit to oak barrels for aging. Reposado should age for at least 2 months, while añejo requires at least 1 year.

Bottling
Once the desired aging is achieved, filter and bottle the tequila. Ensure that the bottles are sealed properly to preserve the quality.
