Prepare Taco Filling

    Season and Cook the Tri-tip

    Rub the tri-tip steak with olive oil and coat it evenly with taco seasoning. Heat a grill or skillet over medium-high heat and sear the steak for about 6-7 minutes on each side, or until it reaches your desired doneness. Remove from heat and let rest for 5-10 minutes before slicing.

Make Chipotle Cream Sauce

    Blend the Sauce

    In a mixing bowl, combine sour cream, chipotle peppers in adobo sauce, and lime juice. Mix well until smooth. Adjust seasoning if necessary.

Prepare Toppings

    Chop and Prepare Vegetables

    Dice the grape tomatoes and onion. Chop the fresh cilantro, setting aside a small amount for garnish. Grate or shred the smoked Gouda cheese.

    Warm Tortillas

    In a dry skillet over medium heat, warm the white corn tortillas for about 30 seconds on each side, or until pliable.

Make House-made Salsas

    Prepare Salsa Verde

    Chop the tomatoes, onion, and jalapeño. Combine all salsa ingredients (tomatoes, onion, jalapeño, cilantro, and lime juice) in a bowl and mix well. Adjust with salt if needed.

Assemble Tacos

    Build the Tacos

    Slice the rested tri-tip into thin strips. On each warm tortilla, layer sliced tri-tip, a drizzle of chipotle cream sauce, smoked Gouda, grape tomatoes, diced onion, and fresh cilantro. Garnish with additional cilantro and diced onion.
