Preparation

  1. 1

    Prepare the steak

Season the ribeye steak with salt and black pepper on both sides. Let it rest at room temperature for about 15 minutes.

  2. 2

    Prepare the vegetables

Peel and dice the potatoes into small cubes. Chop the bell pepper and onion into small pieces. Mince the garlic.

Cooking

  1. 3

    Cook the steak

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the seasoned ribeye steak and cook for about 4-5 minutes per side for medium-rare. Remove from the skillet and let it rest on a cutting board.

  2. 4

    Cook the potatoes

In the same skillet, add another tablespoon of olive oil. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden and cooked through.

  3. 5

    Add vegetables

Add the chopped bell pepper, onion, and minced garlic to the skillet with the potatoes. Season with paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables soften.

  4. 6

    Cook the eggs

While the vegetables are cooking, crack the eggs into a separate skillet and cook them sunny-side up or to your desired doneness.

  5. 7

    Combine and serve

Slice the rested steak into strips and mix it into the hash. Serve hot with the fried eggs on top, garnished with fresh parsley.
