    Prepare the Collard Greens

    Rinse the collard greens under cold water to remove any dirt. Remove the thick stems and chop the leaves into bite-size pieces.

    Chop the Aromatics

    Dice the onion and mince the garlic cloves.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and red pepper flakes, and cook for another 2 minutes, stirring frequently.

    Add the Greens and Broth

    Stir in the chopped collard greens and sauté for another 2-3 minutes until they begin to wilt. Pour in the vegetable broth, and add the smoked turkey leg if using.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes, stirring occasionally.

    Season and Serve

    Once the collards are tender, season with salt and black pepper to taste. Remove the turkey leg, if used, and shred any meat to add back into the dish. Serve hot.
