Method

Brewing Process

    Mashing

    In a large mash tun, combine the Irish barley, corn, and malted barley. Heat the mixture with water to 65°C (149°F) for 1 hour, allowing the grains to release their sugars.

    Lautering

    After mashing, transfer the mixture to a lautering vessel. Rinse the grains with additional hot water to extract more sugars, collecting the liquid known as wort.

    Fermentation

    Transfer the wort to a fermentation vessel and add the yeast. Allow it to ferment for about 5-7 days at a controlled temperature until the fermentation process is complete.

    Distillation

    Once fermentation is complete, transfer the liquid to a pot still for distillation. Distill twice to achieve a higher alcohol content, collecting the heart portion of the distillate.

    Aging

    Transfer the distilled spirit into oak barrels for aging. Allow the whiskey to age for a minimum of 3 years to develop its flavor profile.

    Bottling

    After aging, filter and bottle the whiskey. Ensure it's at the desired alcohol content before sealing.
