Vegetable Pickles

Pickling Brine

Method

Preparing the Vegetables

  1. 1

    Cut the Vegetables

Wash and slice the cucumbers, carrots, radishes, and red onion into thin rounds or sticks. Set aside.

  2. 2

    Prepare the Garlic

Peel the garlic cloves and lightly crush them with the side of a knife.

Making the Brine

  1. 3

    Combine Ingredients

In a medium saucepan, combine water, white vinegar, sugar, salt, black peppercorns, mustard seeds, and dill seeds.

  2. 4

    Heat the Brine

Bring the mixture to a boil over medium heat, stirring occasionally until the sugar and salt have dissolved.

Pickling Process

  1. 5

    Pack the Jars

In clean, sterilized jars, layer the sliced vegetables and crushed garlic cloves, packing them tightly.

  2. 6

    Pour the Brine

Once the brine is boiling, remove it from heat and carefully pour it over the packed vegetables in each jar, ensuring the vegetables are fully submerged.

  3. 7

    Seal and Cool

Seal the jars with lids and let them cool at room temperature for about 30 minutes before transferring to the refrigerator.
