Prepare the Lemons

Wash the lemons thoroughly under cold running water to remove any dirt or wax. Pat them dry with a clean towel.

Zest the Lemons

Using a vegetable peeler or a zester, carefully remove the zest from the lemons, avoiding the white pith as it is bitter. Place the lemon zest in a large glass jar.

Add Alcohol

Pour the high-proof alcohol over the lemon zest in the jar. Seal the jar tightly and shake gently. Let it steep in a cool, dark place for about 7 to 10 days.

Prepare the Simple Syrup

In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool to room temperature.

Combine Mixtures

After the steeping period, strain the lemon zest from the alcohol using a fine mesh strainer or cheesecloth. Combine the alcohol mixture with the cooled simple syrup in a clean glass jar.

Final Steeping

Seal the jar again and let the limoncello steep for an additional 2 to 4 weeks in a cool, dark place. The longer it sits, the better the flavor.

Bottle the Limoncello

After the final steeping period, strain the limoncello again to remove any sediment. Pour the limoncello into clean, sterilized bottles and seal them tightly.
