Method

Flatbread Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape Flatbread

    Preheat the oven to 475°F (245°C). Once risen, punch down the dough and divide it into two equal portions. Roll each portion into flat rounds.

    Bake Flatbread

    Place the flatbreads on a baking sheet and bake for about 10-12 minutes or until golden and puffed.

Pesto Preparation

    Blend Ingredients

    In a food processor, combine fresh basil leaves, pine nuts, garlic cloves, and salt. Pulse until finely chopped.

    Add Cheese and Oil

    Add the grated Parmesan cheese and olive oil to the mixture. Blend until smooth, adjusting the oil for desired consistency.

Assemble Flatbread

    Spread Pesto

    Once the flatbreads are baked, remove them from the oven and spread a generous layer of house-made pesto on top.

    Add Toppings

    Layer the prosciutto, salami, sliced fresh mozzarella, kalamata olives, and tomato slices on top of the pesto.

    Final Bake

    Return the topped flatbreads to the oven for an additional 5-7 minutes to melt the cheese and heat the toppings.

    Serve

    Remove from the oven, slice into pieces, and serve warm.
