Croissant Dough Preparation

    Activate Yeast

    In a small bowl, combine warm milk (110°F or 43°C) and sugar. Sprinkle yeast over the top and let it sit for about 10 minutes until frothy.

    Mix Dough

    In a large bowl, whisk together flour and salt. Create a well in the center and add the egg, activated yeast mixture, and water. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

    Incorporate Butter

    Roll the dough into a rectangle. Place chilled butter in the center and fold the dough over to encase the butter. Roll out and fold in thirds. Repeat this process three times, chilling in between.

    Shape Croissants

    After the final fold, roll the dough into a large rectangle, cut into triangles, and roll each triangle from the wide end to the point. Place on a baking sheet and let rise for 30 minutes.

    Preheat the oven to 400°F (200°C). Bake croissants for 15-20 minutes until golden brown. Let cool.

    Prepare Salmon

    Place the salmon fillet skin-side down in a shallow dish.

    In a bowl, mix sea salt, brown sugar, and crushed black peppercorns.

    Cure Salmon

    Spread the cure mix evenly over the salmon. Place fresh dill on top. Cover with plastic wrap and place a weight on top. Refrigerate for 48 hours.

    Rinse and Slice

    After curing, rinse the salmon under cold water and pat dry. Slice thinly against the grain.

Assembly

    Finely chop the red onion and set aside. Prepare lemon wedges.

    Slice the baked croissants in half. Spread a layer of cream cheese on each half. Top with slices of gravlax, chopped red onion, and capers.
