Method

Fried Chicken

  1. 1

    Marinate Chicken

In a large bowl, combine the chicken thighs and buttermilk. Ensure the chicken is fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

  2. 2

    Prepare Coating

In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and cayenne pepper.

  3. 3

    Coat Chicken

Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture until fully coated. Shake off excess flour.

  4. 4

    Fry Chicken

In a large skillet, heat vegetable oil over medium-high heat. Carefully add the chicken and fry for about 7-8 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Waffles

  1. 5

    Preheat Waffle Iron

Preheat your waffle iron according to the manufacturer's instructions.

  2. 6

    Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

  3. 7

    Mix Wet Ingredients

In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix until well combined.

  4. 8

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; small lumps are okay.

  5. 9

    Cook Waffles

Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown.

Hollandaise Sauce

  1. 10

    Prepare Double Boiler

In a heatproof bowl, whisk together the egg yolks and lemon juice. Place over a pot of simmering water, ensuring the bowl does not touch the water.

  2. 11

    Whisk Continuously

Whisk the yolks until they become pale and thick, about 3-4 minutes.

  3. 12

    Add Butter

Slowly drizzle in the melted butter while continuing to whisk until the sauce is thick and creamy. Season with salt and cayenne pepper to taste.

Assembly

  1. 13

    Plate the Dish

Place a waffle on each plate, top with a piece of fried chicken, and drizzle with hollandaise sauce.

  2. 14

    Garnish

Sprinkle with chopped parsley and serve with maple syrup on the side.
