Cooking Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tsp of salt.

    Cook Pasta

    Add 200g of fusilli pasta to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente.

    Drain and Set Aside

    Once cooked, drain the pasta and set aside, reserving a cup of pasta water.

Making the Sauce

    Heat Olive Oil

    In a large skillet, heat 2 tbs of olive oil over medium heat.

    Add Garlic

    Add 3 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant.

    Cook Tomatoes

    Add 250g of halved cherry tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally until the tomatoes are soft and juicy.

    Season the Sauce

    Stir in 1 cup of chopped fresh basil, 1 tbs of balsamic vinegar, 0.5 tsp of salt, and 0.25 tsp of black pepper. Cook for another 2 minutes.

Combining Everything

    Combine Pasta and Sauce

    Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to adjust the consistency.

    Serve and Garnish

    Serve the pasta in bowls, garnished with 50g of grated Parmesan cheese and a sprinkle of red pepper flakes.
