Flatbread Dough Preparation

    Activate Yeast

    In a small bowl, mix warm water (about 110°F or 43°C) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large mixing bowl, combine flour and salt. Make a well in the center, add the activated yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

    Let the Dough Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Prepare Vegetables

    While the dough is rising, slice zucchini, red bell pepper, and halve the cherry tomatoes. Set aside.

    Grill the Vegetables

    Preheat a grill or grill pan over medium-high heat. Toss the vegetables with olive oil, salt, and pepper. Grill each side for about 2-3 minutes until tender.

    Preheat your grill or grill pan to medium-high heat.

    Shape the Flatbreads

    Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a flat, round shape about 1/4 inch thick.

    Place the rolled flatbreads on the preheated grill. Cook for about 2-3 minutes on each side until grill marks appear and they are cooked through.

    Once cooked, remove the flatbreads from the grill. Top each with grilled vegetables, crumbled feta cheese, and fresh basil leaves. Drizzle with olive oil.
