Preparing the Ingredients

    Prepare the Rice

    If not using leftover rice, cook the white rice according to package instructions. Once cooked, spread it out on a baking sheet to cool. This helps prevent clumping.

    Chop Aromatics

    Mince the garlic and ginger. Chop the scallions, separating the white parts from the green parts for later use.

Cooking the Fried Rice

    Heat the Oil

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

    Scramble the Eggs

    Crack the eggs into the skillet and scramble them until fully cooked. Remove from the skillet and set aside.

    Sauté Aromatics

    In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Then add the chopped white parts of the scallions and sauté for an additional minute.

    Add Rice and Seasonings

    Add the cooked rice to the skillet. Pour in the soy sauce, and season with salt and pepper. Stir well, ensuring the rice is heated through and evenly coated.

    Combine with Eggs

    Add the scrambled eggs back into the skillet and toss with the rice mixture. Stir in the green parts of the scallions.

    Serve the egg fried rice hot, garnished with extra scallions if desired.
