Cooking the Quinoa

    Rinse 1 cup of quinoa under cold water to remove bitterness. In a saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.

Preparing the Vegetables

    Chop the Vegetables

    Dice the red bell pepper, zucchini, and carrot into small pieces. Thinly slice the green onions, keeping the white and green parts separate.

    Sauté the Vegetables

    In a large skillet over medium heat, add a splash of oil. Add the white parts of the green onions, red bell pepper, zucchini, and carrot. Sauté for about 5-7 minutes until the vegetables are tender.

Combining Ingredients

    Add the drained chickpeas to the skillet with the sautéed vegetables. Stir in the cumin, paprika, garlic powder, salt, and black pepper. Cook for another 2-3 minutes until heated through.
