    Prepare the Vanilla Cream Mixture

    In a medium saucepan, combine the heavy cream, granulated sugar, and a pinch of salt. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. Heat the mixture over medium heat until it just begins to simmer, stirring occasionally to dissolve the sugar.

    Whisk the Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are well combined and slightly thickened.

    Combine Mixtures

    Once the cream mixture is hot, remove it from the heat. Gradually pour about half of the hot cream into the bowl with the egg yolks, whisking constantly to temper the yolks. Then, slowly pour the egg yolk mixture back into the saucepan with the remaining cream, whisking until fully combined.

    Strain the Mixture

    Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove the vanilla pod and any curdled bits.

Baking

    Prepare the Ramekins

    Preheat your oven to 325°F (160°C). Arrange 6 ramekins in a baking dish. Pour the strained cream mixture evenly into each ramekin.

    Bake in a Water Bath

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Carefully place the baking dish in the oven and bake for about 30-40 minutes, or until the edges are set but the centers still slightly jiggle.

    Cool and Chill

    Once baked, remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or until thoroughly chilled.

Caramelizing

    Caramelize the Sugar

    When ready to serve, sprinkle 1 teaspoon of granulated sugar evenly over the top of each chilled ramekin. Using a kitchen torch, caramelize the sugar until it is golden brown and bubbly. If you don't have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.

    Allow the caramelized sugar to harden for a minute before serving. Enjoy your homemade crème brûlée!
