Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it is hot enough for the cakes.
- 2
Prepare Ramekins
Grease four 6-ounce ramekins with butter and dust them lightly with flour to prevent sticking. Place them on a baking tray for easy handling.
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- 4
Whisk Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is light and pale.
- 5
Combine Ingredients
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to combine. Add the vanilla extract and a pinch of salt.
- 6
Add Flour
Gently fold in the flour until just combined, being careful not to overmix.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 8
Bake
Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.
Serving
- 9
Rest and Serve
Allow the cakes to cool for 1 minute, then carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
