    Prepare the Tortillas

    Cut the corn tortillas into quarters to form triangle-shaped pieces.

    Fry the Tortillas

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the tortilla pieces in batches, frying until they are golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Combine Tortillas and Salsa

    In the same skillet, reduce the heat to medium. Add the fried tortilla pieces back into the skillet and pour the salsa verde over them. Gently stir to coat the tortillas in salsa and heat through, about 2-3 minutes.

    Transfer the chilaquiles to serving plates. Top each serving with a fried egg, crumbled cotija cheese, a dollop of sour cream, chopped cilantro, slices of avocado, and thinly sliced red onion. Season with salt and pepper to taste.
